Jalapeño Cheddar Sausage Biscuits

south dakota cowgirl, cooking with the cowgirl, biscuits, jalapenosI had a piece of heaven when I was in Texas the first of November. Heaven came in the form of a muffin. A muffin with sausage, cheddar cheese, herbs and jalapeno peppers. And the world said, Amen.

I’m not a huge muffin fan, so I figured I could make the same thing with a biscuit – which I do love.

Call me a cheater if you want to, but Bisquick is my go-to for biscuits. Saves time so don’t judge, okay?

Ingredients
  1. Don't Judge, Okay?
  2. 1 c grated cheddar cheese (2-3 tablespoons reserved for garnish)
  3. ¼- ½ c finely diced jalapeño peppers. I used pickled (Marzetti brand b/c they’re the best); keep the juice or don’t (even add a tablespoon extra if you want); I think the extra juice adds additional flavor/heat. I chopped mine in a mini-food processor, but you can do it by hand if you wish.
  4. 2-3 diced jalapeños for garnish
  5. 2 tbsp dried parsley
  6. 4 tbsp melted butter
  7. 2-3 tbsp fresh diced chive/green onion (optional)
  8. 4 oz spicy ground sausage. I used Jimmy Dean because I think it’s the best.
  9. milk
  10. bisquick
Instructions
  1. Cook the sausage, until no more pink shows. Remove from heat; drain fat.
  2. In a large mixing bowl combine 2 ½ c bisquick mix, with just under 1 c milk, add the grated cheese, and butter and stir until combined. Add sausage and jalapeños, stir until combined. Add parsley and other herbs if desired.
  3. Place onto a nonstick baking sheet (or ceramic stone), garnish with a little extra cheddar cheese and a jalapeno on top. Place into a 450 degree oven for 8-10 minutes or until desired doneness is reached. Makes 12.
Notes
  1. Would be amazing with goat cheese instead of cheddar!

They’re lovely on their own, or served with eggs and black beans. And truthfully I think they’d be great with crumbled goat cheese in them too, but then I think goat cheese goes with everything!

Jenn Zeller is the creative mind and boss lady behind The South Dakota Cowgirl. She is an aspiring horsewoman, photographer, brilliant social media strategist and lover of all things western.

After a brief career in the investment world to support her horse habit (and satisfy her mother, who told her she had to have a “real” job after graduating college), she finally took the leap and stepped away from a regular income; trading the business suit once and for all for cowgirl boots, a hat, and jeans. When Jenn first moved to The DX Ranch on the South Dakota plains, she never imagined she’d find herself behind a camera lens capturing an authentic perspective of ranching, and sharing it with others. Jenn has always been called to artistry, and uses music, writing, images, home improvement, and her first true love of horses to express her ranching passion.

Horses are the constant thread and much of her work centers around using her unique style of writing to share her horsemanship journey with others in publications such as CavvySavvy, the AQHA Ranching Blog, the West River Eagle, the family ranch website, and her own website.

Using photography to illustrate her stories has created other opportunities -- Jenn’s brand “The South Dakota Cowgirl” has grown to the level of social media “Influencer”. This notoriety has led to work with Duluth Trading Company, Budweiser, Wyoming Tourism, Vice, Circle Z Ranch and Art of the Cowgirl, to name a few. She also serves as a brand ambassador for Woodchuck USA, Arenus Equine Health, Triple Crown Feed and Just Strong fitness apparel. Her photography has been featured by Instagram, Apple, TIME Magazine, The Huffington Post, and Oprah Magazine. Jenn’s work has been published internationally, has been seen in several books and has graced the covers of several magazines.

Jenn became a social media influencer by accident when she started to explore Instagram as a way to share her life on the ranch with folks that don’t get to experience it. It’s grown into an incredible platform that she uses to empower women, create an environment for self improvement and share life on the ranch.

When she’s not working, she loves to drink coffee, play with her naughty border collie named Copper, start ranch colts, and run about the country chasing cans. Her mother still thinks she doesn’t have a “real” job.

    OMG…those look amazing. My husband is in Dallas right now for business and pretty much stuck in his hotel but he is raving about the Texas food (even in the hotel!) Maybe I’ll make him some of these when he gets back

    BTW, I’m hosting a giveaway this week for a kids outfit from this site called bow tie kids. They donate a portion of sales to charity so I said I’d help. If you could just leave a comment, it would be great!
