So for those of you foodies out there here’s some fun summertime recipes!
Friday night we hit the grill with some garden fresh eggplant marinated with salt and pepper to taste, coated in olive oil with fresh mint from the garden. We also cooked some yummy country style pork ribs rubbed with brown sugar, salt, pepper, cayenne, garlic powder and some soy. Sweet goodness!! We served the above with a fresh cucumber and tomato salad with feta cheese. But it would have been lovely with some mashed potatoes too!

I love love love tomato and cucumber salad! Yum. We use a greek vinaigrette on that- do you?
If I make separate salads, I like to use a balasamic vinaigrette. Husband loves Ranch. Shocker!
